I don't see why not.. I myself kinda like Azazel and I know a few other people that like him as well.

yeah but i'm not a devil Jin user, with Hwoarang i can use really fast mixups and juggles so no problem at all, with Feng, Kazuya, Raven and Baek i kick his a** the problem comes with characters i don't play that much

As long as you know how to block/dodge all of his attacks and counter them with yours, beating him shouldn't be a problem with any character.
As for Nancy, best way to beat her is with the unlockable attacks (easiest Roger jr.)

Counting guest fighters... well I think you can figure it out ^_^. Aside from the obvious, I also really like Ling, Panda, Miharu, True Ogre, and Lee. I've yet to really play 6 or the alternate versions like BR, so I can't comment on anyone from those ones.
